I would suggest using a solution similar to the one described on; http://javaoraclesoa.blogspot.nl/2013/01/a-json-helloworld-bpel-process.html. There is also sample code in the post. I recommend using custom Java classes. This is documented on http://docs.oracle.com/cd/E21764_01/integration.1111/e10231/adptr_sock.htm 5.3.2.2.
